Apple Fritters (page 207)
4 apples
1 tablespoon sugar
4 eggs, separated
1 tablespoon sour cream
1 tablespoon flour
Cooking oil
Powdered sugar
Cinnamon

Wash and core the apples and cut them into 1/4-inch slices. Toss apple slices with sugar to coat. Mix the egg yolks with the sour cream. Beat the egg whites until stiff. Gently combine the egg yolks, beaten whites, and flour. Dip each apple slice in the batter and fry in hot oil until golden brown. Drain well, Sift together powdered sugar and cinnamon and sprinkle over fritters. Tip: Much better if you use sour apples!
